they would have storyboarded the each shot first, then animated each moving part, then using a composting package put all the pieces together.
it was beautifully executed I thought, I was really impressed with how simplistically realistic the whole thing looked, which meant they were experts in knowing what they were doing which means they had to make a hell of a lot of mistakes to get it right.
